16 Beans

A pound of beans, 16 different varieties.  I soaked the beans overnight.  Then I boiled them two times, each time skimming off the white foam, which I believe is the coating on the beans that causes gas in our system. The beans were still a little hard, I could eat them but they needed to cook more.   I put my ox tail from grass-fed beef in the pot with 1 chopped onion and browned the ox tail with the onion.  Then I added water to cover the ox tail, Himalayan sea salt to taste, 1 garlic clove, 1 carrot cut up and boiled for one hour.  Then I added my beans and cooked them with the ox tail for one more hour.  It was a very delicious  bean soup.  Yumm!
